Blueberry Muffins

"tas" wrote and asked if I had a recipe for Blueberry Muffins for a bake-off coming up in her area. Here is the recipe I usually make for our family. It is from the Betty Crocker cookbook with a couple of modifications!

Blueberry Muffins:
1 c. milk
1/4 c. vegetable oil (or use 2 T. oil and 1/4 c. unsweetened applesauce)
1/2 tsp. vanilla
1 large egg
1 1/2 c. all-purpose flour
1/2 c. whole wheat flour
1/3 c. sugar
3 tsp. baking powder
1/8 tsp. (or dash) cinnamon
1 c. fresh (or frozen) blueberries

Mix together and spoon into prepared muffin tin. Sprinkle with streusel topping.

Streusel: (use your crumb topping in the freezer or the following recipe)
2 T. firm stick margarine or butter
1/4 c. flour
2 T. brown sugar
1/4 tsp. ground cinnamon

Bake muffins at 400 for about 15 minutes. Enjoy!

Oh these sound and look so good. We just went Blueberry Picking last week and I froze a bunch of them. Thank you for sharing.
